recipe thread??

How bout one of these?? Ill give 2 quick ones.
Sloppy Ducks:
-breast ducks, soak/tenderize/season however you please...i just use saltwater overnight.
-next morning put breasts in crockpot, pour in some onion soup mix and cover 50/50 brewed coffee and water..chop up onions and whatever spices you want and chunk in pot.
-cook on low all day or high for 3-4 hours.
-when done (will flake with fork like a pot roast)...take breasts out and shred with fork...pour out all of the liquid and return shredded breasts to pot.
-pour in stubbs bbq sauce or a bbq sauce/tomato paste combination
-brown buns and serve.
Swings Fish batter:
-catfish/sandbass/trout/crappie..any fish fillets...cut into bite size chunks.
-mix potato flakes/flour/cornmeal in a bowl and season well with pepper (your favorite dry seasonings)
-soak fish fillets in buttermilk for at least 2 hours...the longer the better.
-in a seperate bowl mix buttermilk and a couple eggs.
-run fillets through egg wash and roll in potato flake mixture
-fry at 325-350 till golden brown.
a good dippin sauce for the fish is 50/50 picante sauce and sour cream!
